After re -reading my Chimay tasting notes with the full-strength Edge Battalion, I thought I would attempt to pair the Edge Lite with the Chimay Première Red Label. I think I made a very good choice. First, I started with a light snack of fromage and a chalice of Chimay Première. I took notes from Chimay and paired the ale with its partner cheese washed in Chimay Première.
